Sinister’s Ice Cream

In a world where you can be anything be Sinister

What makes a good ice cream? Is it the creamy texture? Is it the flavor? Is it what it reminds you of on a warm summers day? Ice cream can be daring or nostalgic, both bringing something of equal value to the table. At Sinister we like this versatile medium for its ability to pack maximum flavor. That being said, our ice cream base is relatively simple in comparison to many of the long term shelf stable ice cream varieties. Our ice cream, from the beginning was never intended or prepared for long term storage. Last year we prepared fresh made to order Thai style rolled ice cream. We have a photo gallery for those who are interested in this method of creating ice cream. It is the freezing of liquid components on a cold plate with added in flavors. However, what we add is as interesting as what we leave out. To start, our rolled ice cream was absent any stabilizers which are common in store bought ice creams. The method of making ice cream in this manor is called Philadelphia Style ice cream. It is ice cream that is made to be consumed immediately because it is absent additives that allow it to be stored long term.

Maximum Flavor Minimal Ingredients

Philadelphia Style ice cream showcases fresh ingredients. Our milk from Lady Lane, makes our ice cream shine. Fresh seasonal fruits right out of the Portland farmers markets add another elevating level to our ice cream. This year we were thrown a curve ball in terms of how we were able to sell our products. Thus, pre-packaged 1/2 pint ice creams were developed with minimal changes to our base ice cream! We have added a starch based stabilizer making our 1/2 pint ice cream a Sicilian Style ice cream. Starch based stabilizers allow for a longer hold time both in or out of the freezer. We only use one, while other companies tend to use a mix of stabilizers. Regardless, our 1/2 pint ice creams are made fresh the week preceding the markets. We have been experimenting with different fruits and flavors each week, while still offering some of our signature ice creams from last year. We are excited to have been able to launch these Sinister Products and look forward to bringing you more from the Sinister creamery line.
